Banana  Cake

 

 

Makes one full sheet pan (100 servings)

16 cups flour (unbleached or whole wheat pastry)
1/4 cup baking soda
4 teaspoons salt
1 quart sugar or 1 quart honey
1/2 quart vegetable oil
16 ripe bananas, mashed
1/2 quart water
3 tablespoons vanilla
1 quart chopped dates

Preheat the oven to 350º F. Mix the flour, baking soda, and salt together.

In a large bowl, beat the sugar and oil together, then add the bananas and mash them. Stir in the water and vanilla and mix thoroughly. Add the flour mixture, along with the chopped walnuts, and stir to mix. Spread into an oil-sprayed full sheet pan, and bake at 350º F for 45 to 50 minutes.
