Makes about 30 cups
This quick side dish is perfect with any vegetable stir-fry.
1-1/2 gallons cooked rice (white or brown)
1/4 cup toasted sesame oil
4 bunches green onions, finely sliced (about 6 cups)
2 tablespoons minced garlic
1/4 cup soy sauce
2 teaspoons ginger powder
Prepare rice according to one of the methods on page 124 Set aside to
cool.
Heat the toasted sesame oil in a large wok or skillet, then add the
green onions and garlic. Cook 1 minute. Add the cooked rice,
soy sauce, and ginger powder. Cook, turning gently with a spatula until
very hot, about 3 minutes.

Variation: For Chinese Fried Bulgur, substitute 1-1/2 gallons cooked
bulgur for the rice.
