Simple Marinara Sauce

Makes about 1 gallon

8 onions, chopped (about 12 cups)
4 tablespoons crushed garlic
1 #10 can crushed tomatoes
4 tablespoons mixed Italian herbs
1/4 cup honey or sugar
1 teaspoon black pepper

Heat 1 to 2 cups water in a large pot or steam kettle, then add onions and garlic. Cook, stirring frequently, until onions soften and begin to brown, about 30 minutes. Add remaining ingredients and simmer for 20 to 30 minutes. Use for lasagna and other pasta dishes.
