Gingerbread

 

 

Makes one 9 x 9-inch gingerbread

You'll find it hard to believe that this delicious gingerbread contains no added fat. Try serving it with hot applesauce for a real treat.

1/2 cup raisins
1/2 cup chopped pitted dates
1-3/4 cups water
3/4 cup sugar or other sweetener
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ginger
3/4 teaspoon nutmeg
1/4 teaspoon cloves

2 cups whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon baking powder

Combine raisins, dates and water in a saucepan. Add sugar, salt, cinnamon, ginger, nutmeg, and cloves. Bring to a boil. Boil for 2 minutes, then remove from heat and cool completely (This is very important!).

Preheat oven to 350°F. Stir flour, baking soda, and baking powder together in a large bowl. Add the cooled fruit mixture and stir just enough to mix. Spread evenly into a 9 x 9-inch pan which has been misted with a vegetable oil spray. Bake in preheated oven for 30 minutes, until a toothpick inserted into the center comes out clean.
