Applesauce Cake

 

 

Serves 9

2 cups unbleached or whole wheat pastry flour
1/2 teaspoon salt
1-1/2 teaspoons baking soda
1-1/2 teaspoons cinnamon
1/4 teaspoon ginger
1/8 teaspoon cloves

1/3 cup oil
3/4 cup sugar or other sweetener
1-1/2 cups unsweetened applesauce
1/2 cup raisins
1/2 cup chopped walnuts (optional)

Preheat oven to 350°F. Combine flour, salt, baking soda, cinnamon, ginger, and cloves.

In a separate bowl, beat the oil and sugar together, then stir in the applesauce and mix thoroughly. Gradually add the flour mixture to the applesauce mixture. Beat until smooth, then stir in the raisins and walnuts. Pour into an oil-sprayed 9 x 9-inch pan and bake for 45 to 50 minutes. Serve plain or frosted with White Delight Frosting (page 148).
