Serves 9
This moist, flavorful cake really doesn't need frosting. The walnuts
are optional, though they do add a lot of flavor and texture.
2 cups flour (unbleached or whole wheat pastry)
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup sugar or other sweetener
1/3 cup oil
4 ripe bananas, mashed (about 2-1/2 cups)
1/4 cup water
1 teaspoon vanilla
1 cup chopped dates
Preheat the oven to 350°F. Mix the flour, baking soda, and salt together.
In a large bowl, beat sugar and oil together, then add bananas and mash
them. Stir in water and vanilla and mix thoroughly. Add flour mixture
and chopped dates, and stir to mix. Spread into an oil-sprayed 9 x 9-inch
pan, and bake at 350°F for 45 to 50 minutes, until a toothpick inserted
into the center comes out clean.
