Makes
about 3 cup
This colorful rice pilaf has no added fat, so be sure to use a nonstick
skillet.
2 cups cooked brown rice
2 tablespoons water or stock
1/2 cup frozen corn
1/2 cup frozen peas
1/2 cup diced red bell pepper, fresh or canned
1/2 teaspoon curry powder
1/4 cup raisins (optional)
salt to taste
Prepare brown rice according to the recipe on page 12.
Heat water in a large skillet and add the cooked rice. Using a spatula
or the back of a wooden spoon, separate the rice kernels. Add the corn,
peas, bell pepper, curry powder, and raisins. Heat thoroughly. Add salt
to taste.
