Chinese Fried Rice

 

 

Makes about 3 cups

This quick side dish is perfect with any vegetable stir-fry.

1 cup long grain brown rice
1/2 teaspoon salt

2 teaspoons toasted sesame oil
1 teaspoon fresh minced ginger
1 garlic clove, minced
1/2 cup finely sliced green onions, including tops
1/2 cup sliced water chestnuts
1-1/2 tablespoons soy sauce
1/8 teaspoon black pepper

Bring 3 cups water to boil in a medium saucepan and add the rice and salt. Simmer until rice is tender, about 35 minutes. Drain off excess water.

Heat the toasted sesame oil in a large nonstick skillet, then add ginger, garlic, and green onions. Cook 1 minute. Stir in water chestnuts, cooked rice, soy sauce, and black pepper. Cook, turning gently with a spatula until hot, about 3 minutes.
